I'm doing everything through my iPhone and I am not using a mobile skin so what I see is what a desktop user would see?
No, the layout adapts to the size of the screen. It's called Responsive Web Design (RWD).
EDITED-2: I was able to force the iPhone to display the page with a fixed width of 1024 by adding the following meta data to the HTML HEAD: <meta name="viewport" content="width=1024,user-scalable=no" />. Added the meta data tag to the BLOG>Settings>Advanced>Skin & style>Custom meta tag/css section. Just need to do something similar for the back-end/admin.
You're going backwards against history. The whole web community has put great efforts to make content display in a way that doesn't require constant pinch-and-zoom on mobile phones.
I would still like to know about the Item Single Header container and how to get content in it. Possibly to show a date that corresponds with the calendar plug-in.
It is not mandatory to have widgets in there. I you want to have some that make sense, pick some widgets from the section "Info about a specific Item".
