Sorry ytliew. Someone should have gotten back to you quicker on this since it is really fairly simple - I think. AFAIK you can blog by email to only one category. I'm pretty sure you can select that category, but all email posts will go into that category until you change what you set up. I don't use blog by email, but I am almost a million percent convinced that this is the way it is.
