I've installed b2evolution into weblogs.domain.com/b2/. What are all the steps necessary if I want to now move it all to the root of my subdomain? I'm thinking there's a mapping in one or more config files somewhere? And would I need to change anything in the MySQL db?

Move the files, then edit /conf/_config.php to set the correct baseurl. That's it. No need to change the db.
