That's all done with widgets. Go to your Blog settings tab, pick a blog, then pick the widgets subtab. I'm pretty sure it's called the "Menu" container, or maybe "Top Menu". Anyway it's all made from widgets, so you can add a new widget there or possibly change values in an existing widget.

Same thing: it's all widgets all the time. Anything that is not the actual posts bit is pretty much a widget these days.
