Ok I know that to set the time to go to Settings >> Regional. But the problem is that I don't understand because the GMT time is 5 hours a head of my time zone. I tried going - 5 in the little box but that doesn't work. I can't find anything when i searched the forums!

GMT is provided as information only. The offset applies to the difference between your server and your real world. I am currently 8 hours away from GMT but only 1 hour away from my server, so my offset is -1. Since my server does daylight savings time and I don't I have to tweak it every 6 months ... or just ignore it knowing it'll be right in six more months.
