To your question, no you don't have to have 2 front pages, so the question is why you made the extra one and called it Home.

The navigation bar at the top of the screen, for non-logged in users, is called the Site Wide Header, which you may want to read up about, there are a few questions around it's use any layout.

Short answer ;) : each collection has a checkbox to decide whether or not it should be listed in the front office site navigation.
